Many people ask how to use the pan as they are photographed upside down to show how the cake would look like after it is baked in these pans. The inchesfootinches attached to it keeps it stable and flat while baking. You may place the pans on a metal sheet tray before putting in the oven. The gap between the foot and the pan keeps the shorter side of the cake from over baking.
Wash the pans thoroughly with soap and water before use. Use pan spray around the sides and the bottom of the pan to prevent the cake batter from sticking. You may follow the recipe of the cake batter you are using and fill the pans until you reach halfway of the shortest side. Bake the cake as directed by your recipe.
Questions & Answers:
Q: What are the disadvantages of using pans over cutting alone?
A: You save time, money & product. Using the Topsy Turvy Cake Pans makes it so much faster to make a whimsical cake design. Cake artists spends hours and hours of frustrating time to trim the cake and make sure that the angles are right. The cake waste is another issue that is solved with this invention. Because you don't have to cut the cake, you don't end up so much cake waste!
Q: How do I use these pans?
A: Just like any other cake pans you may have in your pantry. Follow the directions of your recipe. It is advisable not to fill the pan more than half way of the shortest side.
Q: I tried baking in these but the centre comes our soupy, what is wrong?
A: This may happen on the larger sizes of the pan like the 10 and the 12 inches diameter. You may use a 2inches heating core placed in the middle and pour the cake batter around and in it. You may also try to lower down the baking temperature by 25 degrees. Since most cake recipes call for a baking temperature of 350, set your oven at a lower temperature and check your oven thermometer (a must!) to make sure that the temperature inside your oven is 325 or even 315. Your cake may take longer to bake but it will bake the middle part just the same time as the sides cook through.
Q: I tried baking in these pans but it domes in the middle, what is wrong?
A: This is a problem that most bakers come upon even when using a regular cake pan. Doming happens because the side of your cake bakes faster than the middle and stops rising. Most just trim it off, which is a waste, some use the baking strip, which prevents the cake from doming but prolongs the baking process even more and top edge of the cake burns since it is not covered by the strip. One thing that I learned from my Vienese pastry chef is...are you ready for this?.... putting a lid on the cake pan. Yes! It solves the problem of doming, having a raw center and cake comes out prefectly baked!
Q: The cake comes out shorter than what I would like, can I improve this?
A: Since you only need the angled cake at the very top of each tier, you may place it on top of a regular shaped and leveled cake to achieve the height that you need.
