Q: Will this colour white chocolate?

A: Callebaut cocoa butter will not colour white chocolate.

Tempering with Mycro

Step 1 - Melt the chocolate at 40-45degreesC (in microwave or bain-marie).

Step 2 - Allow the chocolate to cool at room temperature to 34degreesC for dark chocolate or 33degreesC for milk, white or coloured chocolate.

Step 3 - Add 1% of cocoa butter Mycryo, or 10g for 1kg of chocolate.

Step 4 - Mix well.

Step 5 - When the chocolate is perfectly pre-crystallised, keep the temperature at 34degreesC for dark chocolate and at 33degreesC for milk chocolate and white.

Step 6 - In order to use the chocolate over a longer period of time, keep it at 31-32degreesC for dark chocolate or 29-30degreesC for milk, white or coloured chocolate.

What is technically happening?

Nothing more than a true tempering process. When you temper your chocolate on the marble or when you inchesseedinches with more chocolate, you want to start a chain reaction to crystallize the Beta form of the cocoa butter contained in the chocolate. This specific crystallisation form will bring the shine and the snap you want to your chocolate. An ultimate tempering is crystallisation of only the Beta form of the 7 forms of crystals contains in cocoa butter. With this new technique of tempering, you are not creating Beta forms, you are simply...adding it. Indeed, 1% of Mycryo is just the right amount of Beta crystals to start the chain reaction. You then have the perfect crystallisation, leaving a longer time frame to work your chocolate, since you initiate the process from the very start.

Mycryo 100 Pure Cocoa Butter Powder 100g

This product is amazing, I used it to thin down the merckens melts and worked wonders. Never will I be using trex or vegetable oil. Well worth the money! A little goes a long way!

Seems to work well - it is an easier way to temper chocolate than any other method I have tried.

Next Working Day Delivery (UK)

Any order placed before 4pm (3:30pm for edible images) Monday - Friday, with the Next Working Day Delivery option selected, will be dispatched for delivery the following business day (Monday - Friday), between the hours of 8am - 9pm. A signature is required for this method, so you will need to be at the delivery address to sign for it. Please allow an additional 24 hours for any order to be delivered to the Scottish Highlands. 

If delivery cannot be made, DPD will try again on the next working day. If this is unsuccessful, it will be held at the depot for an additional 5 working days. After this, the parcel will be returned to us, at a surcharge of £5. 

Please Note: None of our services are a guaranteed service. DPD have a 98% success rate on next day deliveries. 

Pre-Orders

Any order containing a product that is listed as a preorder, will be held until the preordered item has arrived in stock. Orders containing a preorder cannot be split, if other items are needed before the expected delivery date, these items should be ordered separately.

Weekend Deliveries (UK)

Any order placed before 4pm* on Friday, with the "Saturday Delivery" or "Sunday Delivery" option selected, will be dispatched on the same day for delivery between the hours of 8am - 6pm on the selected day. A signature is required for this method, so somebody will need to be at the delivery address to sign for it. If the order is placed after the 4pm cut-off on a Friday, the order will be dispatched for delivery on the following weekend.

Please note we are unable to guarantee any order being dispatched to the Scottish Highlands to arrive within the quoted time frame.

*Orders for edible images have a cut-off time of 3:30pm – orders placed after this time will be dispatched for delivery the following weekend.
