What's the difference between extracts and emulsions?
Extracts tend to use an alcohol solvent - a common base for blending essences as most flavours are easily soluable in alcohol. Emulsions however, avoid the use of solvents like alcohol. Instead, the flavours are blended into a water-based solution.
A flavour emulsion is a microscopic dispersion of tiny flavor droplets in an aqueous medium, usually water. This is made possible by the use of an emulsifying agent, in which case the flavor droplets become encapsulated by the gum. In turn this protects the flavour from thermal abuse when heating and baking products. i.e.:
✔ Flavour emulsions do not 'bake out'
✔ Generally lower cost than extracts
✔ A more 'natural' aroma

Please be aware: although our products do not contain animal products, we do not guarantee that one or more of our ingredients are 100% free of animal origin. Many natural flavor chemicals are found in a variety of sources, and may incur a source that could contain animal (i.e. a fruit flavor may contain a smoothing effect from a component with a dairy or egg origin). Please note that all of the flavors we produce, with the exception of products containing dairy, do not contain animal proteins; however, may subsequently have origins from dairy or eggs.
1 teaspoon baking extract = 1 teaspoon emulsion
When it comes to flavouring, professional bakers almost exclusively use emulsions over extracts. Emulsions have a more potent, robust flavour that won't 'bake out' when exposed to heat.
We are open and operating as usual, but please be aware there may be delivery delays due to couriers' exceptionally high volumes.
