Cake support structure - How to use cake dowels

Perfect for structured, concealed cake assembly, cake dowels support wedding and large occasion cakes and prevent collapse.

Here's how to use cake dowels:

  1. The taller and larger the cake, the thicker your cake dowels need to be. As a general rule, you'll need 1 cake dowel for every 2 inches of cake (a sixteen-inch cake requires 8 dowels).

  2. Use a cake board and an edible marker or scriber tool to mark where the next tier will be placed on top of your bottom tier. If you're using wooden dowels, sharpen the end with a pencil sharpener for easy insertion.

  3. Add the dowels evenly to each quadrant of the circle, square or shaped outline you've scribed for the next tier, adding extra dowels to the inner for support. Use an edible marker and mark where the dowels meet the cake, numbering each one to remember their position (mark a one onto the cake icing so you can remember where you started).

  4. Cut your dowels to size, then wash and towel dry them to avoid adding bacteria to the cake. Once the dowels are completely dry, insert them back into the cake in the correct order ensuring they sit flush against the cake. Use your cake board to press down to see if the cake will be fully supported, adding extra dowels to any weak areas.

  5. Add your next layer, then continue the process for every layer.

How to use cake pillars

Using the same process as with your dowels, cake pillars conceal your dowels and offer stylish, open space between each layer of cake. Position your cake pillars, then use dowels and push them down the centre of each pillar until you reach the cake board at the bottom tier of your cake. Mark and cut the dowels to size flush with the top of each pillar (as before when cutting cake dowels for concealed cakes). Add your next cake layer once all dowels are cut and positioned correctly.
