Bake With Us! How To Make Mini Decadent Wedding Cakes

These sweet mini cakes, in a range of flavours, are an eye-catching addition to any wedding table!

Wedding season is one of the busiest times of year for bakers, but it’s also a fantastic opportunity to get creative! In this Bake With Us tutorial, we’re making decadent mini wedding cakes, which make the most perfect wedding favours! These sweet mini cakes, in a range of flavours, are an eye-catching addition to any wedding table! Decorated with pretty edible florals, dried fruits, chocolate curls and shimmering sprinkles, these moreish bakes are sure to win the hearts of every guest! And we’ve got all the tools and ingredients you need to create them!

Using your favourite cake mix or recipe, bake a simple vanilla sponge in a traybake tin. We all love the FunCakes Sponge Cake Deluxe Cake Mix, for a quick, easy and delicious base. All you need to add is butter and eggs! Roll the dough out and use a round cookie cutter to cut out the perfect shapes. Then pop them in the oven to bake.

Pro Tip: Leave your cake to cool on a wire tray for a while before cutting, to ensure it keeps its shape.

Step 2: Cut out your mini wedding cakes

Use a round cookie cutter to cut out your mini cakes. Press the cutter right down through the entire sponge and separate your cakes out. Repeat until you have cut out as many as you need, and pop them to the side, ready for decorating.

Step 3: Make and flavour your buttercream

Separate your Enchanted Cream (or your own buttercream) into four separate bowls. Add a little of your chosen flavourings to each bowl. We added caramel to one, vanilla to one, lemon meringue to one and raspberry to the other! Remember that these flavourings will often add colour to your buttercream too, so the topping will change colour!

We also added a dash of Colour Mill’s Nude oil-blend colouring to the Vanilla buttercream, to warm up the shade a little!

Step 4: Prepare your piping bags

Snip the end off four piping bags and place a different shaped piping nozzle in each. This allows you to create a variety of shapes in your piping! Then fill the bags with your flavoured buttercream.

Step 5: Cut your mini wedding cakes in half

Use a sharp knife to carefully cut each mini cake in half (horizontally). This create the two layers you need for decorating.

Step 6: Pipe your first layer of buttercream.

On the bottom layer of your cake, pipe a swirl of buttercream. This will be the filling layer, so it doesn’t have to be perfect, but it is a good opportunity to practice the shape!

Step 7: Place the top layer on your mini cakes

Add the top layer to the cake, pressing gently down on the layer of buttercream you’ve already create. You want to layers to stick together, but not to totally squash your piping!

Step 8: Pipe your top later of buttercream

Repeat the previous piping design! You may want to aim for a little more precision here, as this is the top layer, which we’re going to be decorating!

Step 9: Time to decorate your mini wedding cakes!

Finally, take your edible flowers, dried fruits and chocolate curls and go wild decorating! This is the time to have a bit of fun and get creative with your combinations. We also added a sprinkling of chopped pistachios to the raspberry buttercream, and a dusting of crushed Biscoff biscuits to the vanilla cake! The sky is the limit…
