How to use embossing stamps for cake decorating

You can use embossing stamps both with fondant icing/sugarpaste, and with buttercream. Here’s how to achieve the best results!

Embossing designs on fondant:

  1. Roll your fondant out to the desired thickness.
  2. Dust your stamp with a thin layer of cornstarch.
  3. Press your stamp down into the fondant (run over the stamp with a rolling pin if it’s a particularly detailed stamp).
  4. Carefully peel the stamp away.
  5. Use a cutter to cut out the shape.
  6. Paint the embossed design if desired and attach to your cake.

Embossing designs on buttercream:

  1. Chill your buttercream-covered cake in the fridge until the surface is firm.
  2. Dust your stamp with a thin layer of cornstarch.
  3. Press your stamp into the buttercream (being careful of the placement if the cake is already decorated!).
  4. Carefully peel the stamp away.
  5. Paint the embossed design if desired!

Troubleshooting - if you find that your icing is getting stuck in an embossing stamp, you may not have applied any/enough cornstarch. It also may be that your fondant is too soft and sticky, or your buttercream hasn’t chilled for long enough. If this is the case, pop either the cake or the fondant in the fridge to chill for ten minutes before applying your stamp. 

Can I use embossing stamps to write a personalised message?

What is the easiest way to paint embossed letters on a cake?

To effectively paint embossed messages on a cake, you’ll need an edible paint and a very thin food-safe brush.

Start working in a thin layer, and gradually build it up to the intensity you want. Paint the letters before attaching them to the cake, to avoid getting unwanted paint on the background of your cake or other decorations.

What is the difference between a reverse embosser and a traditional fondant stamp?

A traditional fondant stamp presses the design inwards, whereas a reverse embosser creates a 3D, outward design. Both are effective cake decorating tools and can add beautiful detail to your cake. It just depends on which style you prefer.
