Bake with Us! How to Make Ghost Madeleines

It's an exciting day here at Cake Dec HQ! We are thrilled to be launching our brand new "Bake with Us" series - a monthly tutorial we hope you will all join in on! Since we're kicking this project off in October, it had to be a Halloween theme. This month we're making the CUTEST ghost madeleines!

Easy to make and ever so eye-catching, these tasty treats will be the hit of any Halloween party table! You'll only need a few of our favourite products to make them. So, if you're looking to be the ghostess with the mostess, and have some fun with your baking this spooky season, we can't think of anything better.

What products are needed to make ghost madeleines?

Madeleine Tin (if you want to make your madeleines from scratch!) Bright White Candy Melts from Wilton White Chocolate Drip from Colour Mill Black Choco Writer from FunCakes Sugar Decoration Eyeballs from Wilton or FunCakes Pink Lustre Dust (choose your favourite brand!) Halloween Cupcake Box from Simply Making Food Safe Shredded Paper from Simply Making

Instructions - How to bake madeleines

You can absolutely work with pre-baked madeleines for this tutorial to save time! However, if you do want to make your own, you'll need (for 8 madeleines):

  • 50g unsalted melted butter
  • 50g caster sugar
  • 50g self-raising flour
  • 1 egg
  • 1tsp honey OR 1tsp of Golden Syrup
  • a pinch of salt
  • oil or more butter to grease the pan

Mix together everything but the flour and butter until pale and fluffy. Whisk in the flour then the melted butter and either spoon in to your tray or pop in a piping bag for more control. Bake for around 10 minutes (or until golden) at 190 degrees (fan oven).

How to decorate ghost madeleines for Halloween!

STEP ONE: Melt your candy melts

While your madeleines are cooling, melt your white candy melts. You can do this in the microwave (in small bursts), in a bain marie, or using the PME Electric Melting Pot

STEP TWO: Add candy coating to madelines

Spoon a good coating of white candy melts in the madeleine cavity in your tin. We did this for four of them. Press a madeleine back into the cavity on top and allow the candy coating to set.

STEP THREE: Create eyes and mouths

Once the chocolate has set, remove the madeleines from the tin and place them on a plate. Use your FunCakes Choco Writer to create the iconic eyes and mouths for your ghost madeleines!

STEP FOUR: Add a little lustre dust

Finish this design with a dusting of pink lustre dust on the cheeks, for a cute bit of added detail.

STEP FIVE: Create your spooky mummy design

Take your remaining madeleines, dip some in your melted candy (about a third of the way down) and drizzle them all across the top and bottom with white choco drip to create a mummy design. This just adds some variety, and the Colour Mill chocolate drip bottles are perfect for this - they're so easy to use.

STEP SIX: Add candy eyeballs

Add your candy eyeballs while the chocolate drip is wet so that they stick! And again, use your FunCakes black choco writer to create an open mouth.

STEP SEVEN: Pop them into a treat box

Finally, pop your madeleines into one of our sleek Halloween cupcakes/treat boxes, filled with some shredded food safe paper for that perfect presentation.
