How to Make Ice Cream Cake Pops

Summertime is a great opportunity to get creative and be playful with your cake projects! So, if you've never tried making ice cream cake pops before, it's the perfect time! These super cute cones are delicious, quick and easy to make and a fun twist on a standard summer treat!
And the best bit? Unless you've left them in the sun for a while, this sort of cone won't melt as you're eating it, unlike ice cream! Perfect for enjoying in the garden on a summer day...

These ice cream cake pops are a deliciously sweet, eye-catching creation that doesn't involve too much complex baking! You can either use cupcakes you've made or bought specifically, or you can use extra leftover sponge from another project. It's a great way to use up sponge that would otherwise be wasted! And by choosing your own colours for the candy coating and sprinkles, you can really make it your own.
So, to get you set for summer fun, let's explore what you'll need and how to make them.

What you'll need...

We have selected a couple of our favourite products here but remember - you can have fun with the colours and flavours and customise your cake pops however you'd like!
Ingredients/edible decorations:
- Renshaw Vanilla Frosting 400g (or alternative!)
- FunCakes Raspberry Flavour Deco Melts
- FunCakes Sugar Strands XL Sprinkle Mix 70g
- Some plain cupcakes (shop our cake/cupcake mixes here!)
- And some small ice cream cones!

Tutorial - Ice Cream Cake Pops

Step 1: Take your pre-made (or bought) plain cupcakes and break them up into a bowl. The number of cupcakes you'll need will depend on how many cake pops you want to make. One cupcake should make approx. 2 cake pops.
Step 2: Add a heaped tablespoonful of buttercream/frosting into the bowl and mix together. You want it to stick together so you can easily form your "ice cream scoops"!
Step 3: Time for some colour and texture! Add a dash of colourful sugar strand sprinkles, mix thoroughly and then roll into balls the size of a scoop of ice cream (use your ice cream cones to estimate this!)
Step 4: Grab your deco/candy melts and melt them down. You can do this in either a bain-marie, the microwave (in short bursts to avoid burning!) or with the handy PME Electric Melting Pots - we love this tool, such a game changer!

Step 5: Dip the edge of your cones into your melted candy/chocolate and place your cake "scoops" on top. The melted candy will help keep it in place!
Step 6: Once that has set, turn your cones upside down and dip the whole top into the melted candy/chocolate, covering all of the cake.
Step 7: Place your upside down cones on to a clean, flat board and sprinkle with some more sugar strands before they set! If you use one of our high quality boards, they are perfect for presenting them on.
Step 8: Pop them in the fridge for at least 30mins to set, and then they're ready to enjoy!
