The spiciness of this cake with the freshness of a cream cheese frosting on top is just one of those perfect combinations that we will never get tired of. With this cake mix you easily make a carrot cake yourself.
The rich spicy flavours of this mix are perfect for a wintery afternoon, an Easter high tea or just anytime with your cup of coffee. Add if you like nuts or raisins to the batter or use this mix for carrot cupcakes.
1. Preheat the oven to 175 celsius (convention over 160).
2. Prepare the 500g FunCakes Mix for Carrot Cake according to the instructions on the package and finally mix in the carrot, raisins and 50g of chopped pistachios with a spatula.
3. Grease the baking pan with baking spray - and place a suitable round of baking paper on the bottom of the baking pan. Spoon the batter into the baking pan and bake the cake for about 50-60 minutes. Turn the cake onto a cooling rack and let it cool completely before slicing.
4. 5. Cut the cake in half with a cake leveler and fill with mascarpone buttercream. Spread the cake all around with a thin layer, but a somewhat thicker layer on top. Stick some chopped pistachio nuts along the bottom edge of the cake and finish the top edge with chopped pistachio nuts as well.

Weekend Deliveries (UK)
Any order placed before 4.30pm* on Friday, with the "Saturday Delivery" or "Sunday Delivery" option selected, will be dispatched on the same day for delivery between the hours of 8am - 6pm on the selected day.
A signature is required for these methods, so somebody will need to be at the delivery address to sign for it. If the order is placed after the 4pm cut-off on a Friday, the order will be dispatched for delivery on the following weekend.
