A Super Cute Strawberry Cakesicles Recipe for any Special Occasion!

When we think of sweet treats, strawberry is one of the flavours you just can't top. Especially when it comes in cake form! In this post, we're sharing a super cute strawberry cakesicles recipe that's perfect for any special occasion. With just a few tools and ingredients, you can create a perfect batch of these cakesicles to share with guests - or enjoy yourself. Got to try before you share, right?!

What you'll need for 8 strawberry cakesicles!
- approx. 500g of vanilla sponge cake (made in advance - recipe here from @bake.works!)
- approx. 250g of vanilla buttercream
- approx. 400g of white chocolate (either melts or a bar broken into small pieces)
- pastel pink chocolate colouring
- bright pink chocolate colouring
- strawberry flavouring
- sprinkles (blend of your choice!)
- gold edible paint
- a food safe paint brush
- 8x cakesicle sticks
- 2x 4 cavity or 4x 2 cavity cakesicle moulds (multiple moulds are not essential - this just allows you to make more in one go!)

Instructions:
- First things first, you want to melt your chocolate. We're going to be adding colour to the chocolate, so go for white chocolate or candy melts on this occasion!
- Split your melted chocolate into three bowls (and keep a little aside for drizzling at the end!). Add your pastel pink colouring to one, bolder pink colouring to another and leave the third white, for variety! Follow the instructions on the individual colouring you are using - most are highly concentrated and only require a few drops! Keep adding and stirring until you're happy with the shade. Pro-tip - using a product like Colour Mill colouring means you only need one colour! Add a small amount for your pastel shade, and more to achieve your bolder colour.
- Pour your melted chocolate into your cakesicle mould and distribute evenly, making sure the sides are covered.
- Insert your cakesicle sticks and pop in the freezer for ten minutes.
- While your chocolate is setting, crumble up your cupcakes and add your buttercream and a few drops of strawberry cakesicles flavouring (add as recommended on the individual flavouring). Mix together thoroughly. It should have a moist, dough like texture and hold its shape.
- When you're confident your chocolate has set, add your cake mix to the mould and cover with more chocolate.
- Pop in the freezer for approximately half an hour (or until set).
Once they have set, take carefully take your strawberry cakesicles out of the mould and it's time to decorate! Take a cake decorating paint brush and dip it in your gold edible paint. Take your time painting on a design, or flick the brush to achieve a unique effect on each cakesicle.
Finishing Touches
Then drizzle some leftover white chocolate over the cakesicles, and sprinkle on your decorations of choice! All white sprinkles can give a really modern finish, but don't be afraid to play with different colours, shapes and textures!
