How to make Easter Bunny Cupcakes!

Springtime brings so many opportunities for cute baking projects! Easter gifts tend to be chocolate-themed (which we love!), but we know that not everyone is a choc-a-holic. For the cake lovers amongst you, finding easy ways to add a spring feel to your treats is a no-brainer. And these Easter bunny cupcakes are the perfect choice!

If you’re looking for inspiration that is both super cute and easy for the whole family to get involved with, you’ve found it! These adorable cupcakes are simple to make but look so effective. And while we’re calling them little Easter bunnies, they are perfect for any bunny-themed occasion through the year – baby showers, first birthdays, you name it!

So, let’s explore what you’ll need and how to make them.

What you’ll need for your Easter Bunny Cupcakes…

We have selected a couple of our favourite products here but remember – you can have fun with the colours and flavours and customise your cupcakes to your own taste!

Ingredients FunCakes Vanilla Cupcake Mix FunCakes Enchanted Cream Mix 200g Colour Mill Baby Pink- Oil Based Food Colouring 20ml FunCakes Black Sprinkle Medley 65g FunCakes Choco Writer Dark Choco 25g Pack of standard marshmallows Desiccated coconut (optional) Tools Colour Mill 1A Round Piping Tip (or similar!) Simply Making 12-inch Disposable Piping Bags x100 Loyal 4” Angled Spatula (or similar!) Simply Making 4” Deep Pastel Yellow Luxury Cupcake Box

Step-by-Step Tutorial - Easter Bunny Cupcakes

Make sure you have the cupcakes you’re going to be using baked and cooled before you begin!

Step 1: Pipe your frosting

Take your FunCakes Enchanted Cream (or whatever frosting you have chosen) and pipe a wide circle in the middle of your cupcake.

Step 2: Flip your cupcakes upside down

Turn the cupcake upside down and press gently down onto a piece of parchment/baking paper until you can see the frosting appear at the edge of the cupcake case. Pop it in the fridge for around 30 minutes to set into a flat-topped shape!

Step 3: Dip your cupcakes into the coconut

When your frosting has set, peel the cupcake off the parchment paper and dip it into your bowl of desiccated coconut! This will give that effective, fur-like texture, and add a lovely bit of flavour. If, however, you aren’t a fan of coconut, you can skip this step!

Step 4: Cut out your marshmallow bunny ears

Take your marshmallow and cut it diagonally in half to create the perfect bunny ear shape!

Step 5: Add a pop of pink with food colouring

Take your pink food colouring and add it to your frosting. Mix together and when you’re happy with the shade, pipe a small amount onto each marshmallow half. Use your spatula or knife to smooth it out along the length of the marshmallow, before sticking them on to the cupcake. This will create the iconic bunny ear look!

Step 6: Add sprinkles for eyes

Next, take two small, round black sprinkles (we used the FunCakes Black Sprinkle Medley) to create the eyes.

Step 7: Create the tiny noses

And, using the FunCakes Choco Writer in Dark Choco, create tiny heart shapes on your parchment paper for the noses. These set quickly, ready for you to add them to the Bunny cupcakes to complete the face!

Step 8: Present your Easter Bunny Cupcakes in a cupcake box

Finally, it’s time to pop your adorable cupcakes into your cute cupcake box, ready to be presented in style.

  • Short on time? Instead of putting the cupcakes in the fridge for 30 minutes to set the buttercream, pop them in the freezer for 10 minutes!
  • Use an oil-based food colouring for best results - this formula works best for high-fat ingredients like buttercream!
